Southwestern Chili

I made this chili the other night with venison, but I'll post the recipe with ground beef.  Feel free to use ground turkey or even go vegetarian if you want to!!

Ingredients

1 Tbsp olive oil
2-3 lbs. ground meat (beef, venison, turkey, etc.)
1 large onion, chopped
1 Tbsp hot pepper sauce
4 Tbsp. chili powder
1 Tbsp. cumin
1 Tbsp. cocoa powder or chocolate chips
4 large garlic cloves, pressed or finely chopped
1/2 tsp. Perfect Pinch Cajun seasoning
1/2 Cup BBQ sauce
1 28 oz. can crushed tomatoes
1 28 oz. can petit diced tomatoes
1 packet Sazon Goya coriander and Annatto seasoning
1 12 oz. bag whole kernal corn, frozen
1 Lg. can of black beans, rinsed and drained

Directions

Add oilve oil to large pot.  Cook onion and garlic over medium heat until translucent. Add ground meat and cook until browned.  Add next 10 ingredients.  Cook over medium heat, stirring occasionally, for an hour until flavors really combine.  Add corn and black beans.  Cook an additional 20-30 minutes.  Garnish with shredded cheddar cheese or sour cream.

Serves 8.

Serving size= 2 cups
Calories per serving: 320 calories * (if made with ground turkey.  Venison adds 120 calories per serving and 80% lean ground beef adds 240 calories per serving).  I calculated the calories per serving myself based on ingredients and quantities.

Gluten Free Meatloaf

Hello, Luv's!  Since I last posted a recipe, the family and I have entered the world of gluten free.  Thankfully, it wasn't because of a discovered allergy....although I would not be surprised to discover that one or more of us have a sensitivity to gluten....we just decided to eliminate it from our diet and see how we feel.  My son has ADHD, and I have no doubt he will benefit from this diet.

I made this wonderful meatloaf yesterday and I wanted to share the recipe with you.  Even if you are not gluten free, I don't think you will be disappointed with this recipe.  Thank you to my fabulous cousin, Rex, who suggested rice to me as a gluten free alternative to bread crumbs.

Ingredients

1.5 lbs. ground beef or meatloaf mixture
1 cup cooked rice
1/2 packet of generic store brand onion soup mix (store brands are gf, Lipton and Knor is not)
1 large egg

For glaze:
1/2 cup ketchup
1/8 cup brown sugar
1 Tbsp yellow mustard

Preheat oven to 375 degrees.

In a bowl combine the first 4 ingredients and completely mix together.  Place in a loaf pan, or shape into a loaf in a 8x8 baking or casserole dish. (It will hold it's form if you do this....I lost my loaf pan months ago.  lol)

In a separate bowl combine last 3 ingredients and spread generously over the top of the meatloaf.

Place in oven and cook approximately 50-60 minutes until cooked through.  Let it rest for 10 minutes before slicing.
