A Gluten Free Overhaul

Hello Friends!  Since I have several friends who are gluten free due to a wheat/gluten allergy, and since my family is now going gluten free to eat more healthy and help my son with his ADHD, I have been cooking gluten free for about a week now.  My biggest challenge has been to stop concentrating on what we cannot have.  I feel like I have blinders on.....all the yummy delicious meals we've been eating for years that already are naturally gluten free have seemed to completely disappear from my memory.  Instead I can only seem to recall those recipes that have bread, flour, or bread crumbs in them, or bread and pasta that go with them.

So, I came back to this blog today not only to post my gluten free meatloaf recipe that I made (and LOVED), but to look through the recipes I've posted in the past for a little inspiration.  The great news is that many of the recipes I've previously posted were already gluten free.  The other great news is that many others that weren't are pretty easy to adapt, which I've already done for you.

Please keep in mind...I'm learning and brand new at gluten free cooking.  I read ingredient labels, and if I can't find a GF seal, I come on the internet and do a search.  Admittedly, I might make a mistake or two, so I just ask you to do your own due diligence with the ingredients when following my recipes if you require gf.  When in doubt...search it!

Also...if you are not gluten free....all my recipes here can be adapted back by using gluten containing ingredients (for example the Italian turkey sliders can be served on the crusted bread as stated, or the Terrifically Tasty Chicken Fingers can be made with Corn Flakes instead of Corn Chex).

Thank you for joining me on my new cooking adventure!!  Hopefully I can inspire you or give you a new family favorite from one of my recipes.
